powbab® Baobab Sheet Cake with Lemon Cream Cheese Frosting
Ingredients:
8 tablespoons unsalted butter, room temperature, plus more for pan
2 1/4 cups all-purpose flour (prefer unbleached), plus more for pan
Preheat oven to 350 degrees. Lightly butter a 9-by-13-inch baking pan; dust with flour. Use finger to get dusting even on buttered pan. Whisk together flour, powbab® baobab powder, baking powder, baking soda, and salt. Set aside.
The following ingredients work best at room temperature (butter, eggs, milk). Adhesion of these ingredients works best at room temperature.
In mixer bowl, beat butter with 3/4 cup sugar on medium speed in a mixer fitted with the paddle attachment until light and fluffy, 5 minutes. Add eggs, one at a time, beating until combined after each addition and scraping down sides of bowl. Beat in vanilla. Reduce speed to low and add flour mixture in two batches, alternating with milk and beginning and ending with flour mixture.
Transfer batter to prepared pan, smoothing top with spatula. Bake, rotating pan halfway through, until cake is golden and puffed and a tester inserted in center comes out clean, 22 to 25 minutes. Let cake cool completely in pan on a wire rack.
Use an offset spatula to spread cake with frosting. Serve, optional with blueberries. Enjoy!
